Thriver Recipe: Berry Chia Bites

This Thriver recipe comes from Mary, and it’s a delicious one!

Her Berry Chia Bites are a refreshing, nutrient-dense treat rich in antioxidants, omega-3 fatty acids, and fiber. Perfect for a midday pick-me-up or a healthy dessert, these bites are as functional as they are flavorful.

Makes 8–10 bites | Gluten-Free | Dairy-Free | Optional Probiotic Boost

Ingredients

  • 1 (6 oz) package fresh raspberries (or berry of choice: strawberries, blueberries, blackberries)
  • 2 Tbsp chia seeds
  • ½ tsp raw honey (optional, based on sweetness of berries)
  • ½ – ¾ cup dark chocolate chips (72% cacao or higher)
  • ½ tsp coconut oil

Optional Add-In:

  • 1–2 Tbsp plain probiotic Greek yogurt for added creaminess and gut health support

Instructions

  1. Mash & Mix:
In a bowl, mash the berries with a fork until smooth. Stir in chia seeds (and honey, if using) until fully combined.
  2. Freeze the Filling:
Spoon mixture into a silicone ice cube tray or small molds. Freeze until firm, ideally overnight.
  3. Melt the Chocolate:
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until smooth.
  4. Dip & Set:
Unmold the frozen berry bites and quickly dip each one into the melted chocolate.
Place on a wax paper–lined tray.
  5. Refreeze:
Return the coated bites to the freezer until set—about 20–30 minutes.

Why We Love It at Thrive

  • Berry antioxidants support immune health and fight inflammation
  • Chia seeds offer plant-based omega-3s and fiber
  • Dark chocolate satisfies cravings while supporting heart health
  • Option to add probiotics for gut support and creaminess

Thrive Tip:
Make a double batch and store in the freezer for up to two weeks. These are the perfect post-workout bite or afternoon energy boost!

Thanks again for your submission, Mary!
