Asparagus with Toasted Walnuts and Pomegranate Basil Vinaigrette
Ingredients:
- 1 bunch asparagus trimmed ( 1 T olive oil, salt and pepper to taste)
- ½ cup walnuts, toasted
- 2 T pomegranate juice
- 2 T extra virgin olive oil
- 2 T balsamic vinegar
- 1/3 cup chopped basil
Directions:
- Preheat oven to 375
- Combine pomegranate juice, olive oil, vinegar + basil for vinaigrette + set aside
- Drizzle asparagus with olive oil, then sprinkle with salt and pepper and bake.
- Cook in preheated oven for 20 minutes. Do not overcook. Allow the asparagus to cool, then top with walnuts + vinaigrette.
