Asparagus with Toasted Walnuts and Pomegranate Basil Vinaigrette

Asparagus with Toasted Walnuts and Pomegranate Basil Vinaigrette

Ingredients:

  • 1 bunch asparagus trimmed ( 1 T olive oil, salt and pepper to taste)
  • ½ cup walnuts, toasted
  • 2 T pomegranate juice
  • 2 T extra virgin olive oil
  • 2 T balsamic vinegar
  • 1/3 cup chopped basil

Directions:

  • Preheat oven to 375
  • Combine pomegranate juice, olive oil, vinegar + basil for vinaigrette + set aside
  • Drizzle asparagus with olive oil, then sprinkle with salt and pepper and bake.
  • Cook in preheated oven for 20 minutes. Do not overcook. Allow the asparagus to cool, then top with walnuts + vinaigrette.
