Crisp roasted sweet potato slices form the base for smooth goat cheese, bright homemade cranberry sauce, and a refreshing hint of mint. Easy to prepare and bursting with seasonal flair, this appetizer is sure to impress your guests.

Fresh Cranberry Sauce

Ingredients:

  • 2 cups fresh cranberries
  • Juice of 1 large orange
  • Zest of 1 large orange
  • 2 tablespoons raw honey (adjust to taste)
  • 1 ounce orange liqueur (e.g., Grand Marnier, optional)

Instructions:

  1. Add cranberries, orange juice, orange zest, and honey to a food processor.
  2. Pulse until the mixture is mostly smooth but still slightly chunky.
  3. Taste and adjust honey if needed.
  4. Stir in the liqueur, if using.

Sweet Potato Crisps With Goat Cheese & Cranberry Sauce

Ingredients:

  • 1 large sweet potato
  • 2 tablespoons avocado oil
  • Salt and pepper, to taste
  • 4 ounces goat cheese
  • Fresh mint leaves, for garnish

Instructions:

  1. Preheat oven to 425°F (218°C).
  2. Slice the sweet potato into 1/8–1/4-inch rounds (a mandolin slicer works well).
  3. In a large bowl, combine avocado oil, salt, and pepper. Add sweet potato slices and toss to coat.
  4. Arrange sweet potato slices on a baking sheet and roast until crisp and browned, about 15–20 minutes.
  5. Remove crisps from the oven and pat off any excess oil.
  6. Top each crisp with a slice of goat cheese, a dollop of cranberry sauce, and a small mint leaf.
