Thanks to our friends at The Institute of Functional Medicine for sharing this recipe great for serving as side dishes, snacks, and tossing over salads.

- 1 bunch trimmed beets (about 4 beets)
- 1 tablespoon balsamic vinegar
- 2 pinches sea salt
- 2 pinches black pepper
Directions:
- Preheat oven to 400°F.
- Gently scrub beets, and pat dry. Wrap in foil, and roast until tender (about 1 hour). Let cool, then peel and dice.
- Place beets in a medium bowl, toss with balsamic vinegar, sea salt and pepper, and serve.
Note: A great idea is to cook up more beets than you need and then save in the fridge for use later in the week (salads, snacks, side dishes, etc.).
