Quick Peach and Blueberry Cobbler

Are you enjoying the abundance of peaches as much as we are? Over the next few weeks, we’ll share several recipes highlighting this delicious fruit. Try our mouthwatering Peach and Blueberry Cobbler – the perfect dessert for hot summer days. Give it a try this weekend!
Ingredients:
- 3 peaches, skin on sliced thinly
- ½ c blueberries
- 2-3 T coconut sugar
- 1 t lemon rind
- 2 T lemon juice
- ½ t almond extract
- 2 T arrowroot or tapioca flour
Topping:
- ½ c almond flour
- ½ c rolled oats (not instant)
- ¼ c shredded coconut
- 3 T coconut sugar
- ¼ c sliced almonds
- 2-3 T coconut oil
Directions:
- Combine sliced peaches, blueberries, coconut sugar, lemon rind and juice, and almond extract. Sprinkle the mixture with arrowroot or flour. Mix well and pour into an oiled baking dish.
- Combine all dry ingredients. Add enough oil to moisten. Use the dry ingredients to top peaches and blueberries.
- Bake at 350 degrees for 30 minutes or until the topping is lightly browned. Remove from the oven and let sit for 10 minutes before serving. Serve with coconut cream or ice cream.
