Rainbow Nourish Bowl

These colorful bowls are such an easy and fun way to eat well. All the chopping can be done ahead of time and everyone makes their own bowl according to their individual taste. Perfect for a busy day or a picky eater!
Here is what was in my 🌈bowl:

Black Beans
Avocado
Cilantro
Carrot
Corn
Scallion
Beets
Pineapple

Here is my simple dressing to bring everything together:
2 Tbsp fresh lime juice
1 Tbsp maple syrup
1/4 tsp salt
pepper
1/4 cup olive oil
