Sesame Asparagus and Carrot Stir Fry

This veggie-packed recipe combines crisp asparagus and sweet carrots, all tossed in a flavorful sesame sauce. Perfect as a light main course or a side dish, this stir fry is quick to prepare and full of health benefits.
Ingredients:
- 1 T avocado oil
- 24 asparagus
- 6 large carrots
- 1 T grated ginger
- 2 garlic cloves, minced
- 1 T miso
- 1 T coconut amines
- 2 t toasted sesame oil
- 1 T toasted sesame seeds
Directions:
- Cut asparagus into 1-inch pieces diagonally. Peel the carrot and cut into ¼ inch slices at a diagonal.
- Heat a nonstick wok or large pan and add the oil.
- Add ginger, garlic, and miso and cook until fragrant.
- Add asparagus and carrots and cook for 4 minutes, tossing to coat with seasonings. Place a lid over the wok and cook for 2 minutes until vegetables are tender.
- Add coconut amines and toss. Sprinkle it with sesame seeds and toasted sesame oil.
