Spring Turkey & Avocado Sandwich
If you’re like us, you used last weekend’s beautiful weather to spend every minute outside.
The kids, playing in the yard, the parents reading and relaxing, and then it happens. “Mom, we’re hungry, can we have a snack?”
I panicked, I didn’t want to stop reading my book, but I didn’t want to give in to the easy fix…. junk food.
Our Solution?
This simple Turkey and Avocado sandwich. It took 10 minutes to make four for the whole family, and it’s full of protein, veggies, and flavor.
Ingredients:
- Dave’s Killer 21 Whole Grains and Seeds Bread
- Cucumber (sliced thin)
- Avocado Mashed
- Cherry Tomatoes
- Lean, Organic Turkey Breast
- Salt & Pepper to taste
Directions:
Place bread in the toaster. While bread is toasting, cut six thin cucumber slices for each sandwich and six cherry tomatoes lengthwise.
When the bread is done toasting add a healthy portion of avocado on both pieces and then layer one slice with cucumber, turkey, cherry tomatoes, and salt and pepper.
Cut in half and enjoy!
Recipe modifications:
Add sprouts
Substitution for Cherry Tomatoes: heirloom tomatoes or roasted red peppers.
