Ingredients:

  • 1 ½ cups old-fashioned rolled oats (Bob’s Red Mill recommended)
  • 1 cup unsweetened almond butter
  • ¼ cup honey
  • 2 scoops protein powder (Transparent Labs unsweetened used in this recipe)
  • ¼ cup ground flax seeds
  • ⅓ cup mini chocolate chips
  • ¼ cup shredded coconut (plus extra for rolling, if desired)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Instructions:

  1. Mix oats, protein powder, flax seeds, cinnamon, and shredded coconut until well combined in a large bowl.
  2. Add honey and almond butter, stirring until fully incorporated.
  3. Fold in mini chocolate chips.
  4. Using a 2-teaspoon cookie scoop, form the mixture into small balls.
  5. Roll each ball in shredded coconut for extra texture (optional).
  6. Place in an airtight container and refrigerate for at least 30 minutes before serving.
  7. Store in the refrigerator for up to 7 days.
