BBQ Shrimp Packets

These BBQ Shrimp Packets are a simple and flavorful way to enjoy grilled shrimp. Packed with shrimp, vegetables, and a blend of spices, each packet cooks quickly on the grill, making for an easy meal with minimal cleanup. Perfect for a quick dinner or weekend cookout.

Ingredients:

  • 2 T butter and 2 T olive oil.                                    
  • 2-3 t hot sauce
  • 2 T lemon juice                                                        
  • 1/8 t cayenne pepper
  • 1 T Worcestershire sauce                                     
  • 3 cloves garlic minced
  • 1 t salt                                                                        
  • 1 t pepper
  • 1 T fresh rosemary                                              
  • 1 ½ t smoked paprika                                   
  • ¾ t dried thyme  
  • 1 lb shrimp, peeled and deveined
  • 2 red-skinned potatoes diced
  • 2 lemons thinly sliced
  • 1 medium onion thinly sliced
  • 2 Corn cobs cut into 2 in pieces
  • 6 oz cooked chicken andouille sausage cut into 1/2 in pieces

Directions:

  1. Melt butter. Add sausage, onions, and potatoes to a large bowl. Add olive oil, salt, pepper and toss to coat.
  2. Add butter, Worcestershire, lemon juice, garlic and spices and make a paste. Toss shrimp in paste. Add shrimp to the bowl with sausage and vegetables.
  3. Make 6 12-inch aluminum foil squares and top each with equal amounts of shrimp, vegetable, and sausage mix. Wrap up by folding over ends then attaching in the center to form a pack.
  4. Grill for 25 minutes or place in a hot oven at 350 degrees for 30 minutes.
