Creamy Basil Dressing
This Creamy Basil Dressing is great on salads and summer veggies!
Ingredients:
- 1c cashews, raw and unsalted
- (water for soaking cashews)
- 1/2 cup oat milk (can sub other unsweetened plant milk)
- 1/4 cup olive oil
- 3 cups fresh basil leaves
- 1/4 cup nutritional yeast
- 2 T lemon juice
- 1/2 T onion powder
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp salt
Instructions:
- Cover the cashews with hot water and soak for 30min Discard the soaking water (cashews can also soak overnight).
- Place all ingredients in a blender or food processor — drained cashews, milk, oil, spices, basil leaves, nutritional yeast, and lemon juice.
- Blend on high for about 3 minutes until everything is creamy and smooth. (You can add a little extra milk or olive oil to your tasting and consistency if needed).
- Store in an airtight container or mason jar in your refrigerator for 5-7 days. The dressing with thicken slightly in the refrigerator.
