Pairing the salmon with the fruit salsa takes it to a higher level. You can use any fish in place of the salmon. The salsa adds flavor and powerful antioxidants.
Ingredients:
- ½ cup blueberries
- 1 tsp olive oil
- 1/3 cup peeled, diced mango
- Salmon filets 3 oz
- 2 T minced red onion
- Sea salt and black pepper for salmon
- 2 T minced red pepper
- 2 T chopped fresh cilantro
- 1 T lime juice
- ½ t minced jalapeno pepper
Directions:
- Preheat oven to 400 degrees.
- Mix all ingredients except salmon and olive oil in a bowl. Keep in the fridge and allow to sit at least 20 minutes. It can be made a day ahead as well.
- Season salmon with olive oil and salt and pepper. Place in a serving baking dish sprayed with olive oil. Bake salmon for 20 minutes.
- Top with salsa and serve.
