Salmon with Blueberry Mango Salsa 

Pairing the salmon with the fruit salsa takes it to a higher level. You can use any fish in place of the salmon. The salsa adds flavor and powerful antioxidants.  Ingredients: ½ cup blueberries 1 tsp olive oil 1/3 cup peeled, diced mango Salmon filets 3 oz 2 T minced red onion Sea salt and black pepper for salmon 2 T minced red pepper 2 T chopped fresh cilantro 1 T lime juice ½ t minced jalapeno pepper 1 t honey ¼ t sea salt Directions: Preheat oven to 400 degrees. Gochujang-Glazed Salmon with Garlic Spinach

We are always encouraging our patients to experiment with new spices and herbs. This recipe is a great example. Gochujang is a Korean red chili paste. When it is combined with the honey it gives the salmon a spicy sweetness that will be addictive. You can find this spice in any grocery in the Asian aisle. Ingredients 2 T gochujang 1 T mirin or sweet sake 1 T honey 2 T white miso 2 T gluten free, low sodium soy sauce or tamari ( can use coconut amines ) 2 t toasted sesame oil 4 garlic cloves, minced and divided 2 t minced ginger 1- 1 ¼ pounds of salmon, wild caught preferred, cut into individual portions 8 cups of baby spinach Scallions, chopped Sesame seeds...

Serves 10 Ingredients: 2 Salmon Filets or 2 large cans of Salmon 1 1/2 t salt 1 1/2 t pepper One onion diced, sauteed 2/3 cup plain breadcrumbs (Almond Flour as a Vegan option) 1/3 cup light mayo (Avocado Mayo as a Vegan option) 1/4 cup Dijon mustard One egg 4 T lemon juice Directions: Preheat oven to 400 degrees Salt & Pepper the salmon and cook in preheated oven for 15 minutes. This easy and healthy salmon burger is a family favorite! Ingredients for Salmon Burgers: 1 lb salmon fillet (skin removed) 1 cup fresh breadcrumbs (see note) 1/4 cup chopped cilantro or parsley 2 eggs 1/4 cup mayonnaise 1 tbsp lemon juice 1 tsp mustard 1/2 tsp. salt 1/2 tsp. pepper olive oil for greasing the pan or grill Ingredients for Avocado Salsa: 1 large avocado, chopped 1/3 cup chopped red onion 1/4 cup chopped fresh cilantro 1 lime, juiced 1 tbsp extra virgin olive oil salt and pepper Directions: Chop the salmon fillet into small pieces (about 1/4 inch) and transfer it into a medium mixing bowl.
