Mini Salmon Cakes

People raved about this Mini Salmon Cakes recipe when we made them at our last in-person cooking event..remember those things ;) So much so that we felt necessary to share it with the world. Enjoy! Serves 10 Ingredients: 2 Salmon Filets or 2 large cans of Salmon 1 1/2 t salt 1 1/2 t pepper One onion diced, sauteed 2/3 cup plain breadcrumbs (Almond Flour as a Vegan option) 1/3 cup light mayo (Avocado Mayo as a Vegan option) 1/4 cup Dijon mustard One egg 4 T lemon juice Directions: Preheat oven to 400 degrees Salt & Pepper the salmon and cook in preheated oven for 15 minutes. It's full of flavor, and healthy natural herbs. Don't be afraid to modify, one of my favorite adds to this recipe is to add a big bunch of German Thyme to the marinade. Roasted Acorn Squash

So simple, so tasty and so great for you! Acorn Squash is high in antioxidants to fight free radical damage it also aids in boosting your immune system, decreasing inflammation and reducing high blood pressure. In less than 5 minutes you will have this recipe in the oven and ready for dinner! Ingredients: 1x Acorn Squash 1/2 tsp. Maple Syrup Kosher Salt & Pepper to taste Directions: Pre-Heat oven to 400. Cut Acorn in half and scoop out seeds.
