Crudités with Green Goddess Dip: A Fresh Way to Enjoy More Herbs

Fresh herbs are one of the simplest ways to add flavor, color, and variety to everyday cooking. And this Green Goddess Dip is a perfect example.

Made with Greek yogurt, avocado, lemon, and a generous mix of parsley, basil, dill, and tarragon, this creamy dip bursts with fresh flavor. Pair it with a colorful assortment of vegetables for a simple appetizer, afternoon snack, or addition to your holiday table.

But herbs offer more than wonderful flavor. Many contain naturally occurring plant compounds, including polyphenols, that add nutritional variety to our diets. Using fresh herbs regularly is an easy way to make vegetables and other nutritious foods more appealing without relying on heavy sauces or excess salt.

At Thrive, we’re always looking for practical ways to make healthy eating both enjoyable and sustainable. Sometimes that starts with a handful of fresh herbs.

Why We Love Cooking with Fresh Herbs

Herbs may be small, but they can make a big difference in the kitchen. They add layers of flavor, aroma, and color while contributing beneficial plant compounds.

This recipe brings together four herbs, each with its own personality:

  • Parsley: Fresh and slightly peppery, parsley provides vitamin K and naturally occurring antioxidants. Its clean flavor creates the foundation for this dip.
  • Basil: Sweet, fragrant, and slightly peppery, basil contains aromatic compounds and polyphenols studied for their antioxidant properties.
  • Dill: Bright and grassy with a distinctive flavor, dill pairs beautifully with yogurt, lemon, and vegetables.
  • Tarragon: With its subtle licorice-like flavor, tarragon adds complexity and gives this Green Goddess Dip its distinctive character.

Together, these herbs create a flavorful combination that makes eating more vegetables something to look forward to.

Herbs aren’t a substitute for a balanced diet or medical treatment, but adding a variety to meals is a simple way to expand the range of plants we eat.

Green Goddess Dip Recipe

Prep Time: 15 minutes
Chill Time: Ideally several hours or overnight
Cooking Required: None

Ingredients

  • 1 cup full-fat plain Greek yogurt
  • 2 green onions, white and green portions sliced
  • 1 ripe avocado, peeled and pitted
  • 2 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh Italian flat-leaf parsley
  • 1/3 cup fresh basil leaves
  • 1/3 cup fresh dill
  • 1/3 cup fresh tarragon
  • 2 teaspoons sherry vinegar
  • 2 teaspoons capers
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Directions

  1. Prepare the herbs. Rinse and thoroughly dry the parsley, basil, dill, and tarragon. Remove any tough stems.
  2. Combine the ingredients. Add the Greek yogurt, green onions, avocado, garlic, lemon juice, lemon zest, fresh herbs, sherry vinegar, capers, and olive oil to a food processor.
  3. Blend until creamy. Process until smooth, stopping occasionally to scrape down the sides.
  4. Adjust the consistency. If the dip is too thick, add a little additional olive oil or a small splash of water until it reaches your preferred consistency.
  5. Season to taste. Add salt and freshly ground black pepper as needed. For a brighter flavor, add another squeeze of lemon.
  6. Chill before serving. Transfer to an airtight container and refrigerate for several hours, preferably overnight, to allow the herb flavors to develop.
  7. Serve with colorful vegetables. Arrange your favorite fresh vegetables around a bowl of Green Goddess Dip and enjoy.

Build a Colorful Crudité Platter

One of the best things about this recipe is how easily it encourages us to eat a greater variety of vegetables.

Try pairing the dip with:

  • Rainbow carrots
  • Red, yellow, and orange bell peppers
  • Cucumber slices
  • Celery sticks
  • Radishes
  • Broccoli florets
  • Sugar snap peas
  • Endive leaves
  • Cherry tomatoes

Choose several colors, textures, and shapes to create an inviting platter. The more variety you offer, the more opportunities there are to enjoy different vegetables.

Cooking Tips: Getting More from Your Fresh Herbs

Use herbs generously. Don’t think of herbs as something reserved for garnishing. They can be a central ingredient in dressings, dips, marinades, soups, and sauces.

Experiment with combinations. Parsley and basil pair beautifully, while dill and tarragon add distinctive flavors. Try different combinations to discover your favorites.

Store herbs properly. Many tender herbs stay fresher when you place their stems in a jar with a little water and loosely cover the leaves in the refrigerator. Basil generally prefers room-temperature storage.

Reduce your reliance on salt. Fresh herbs, citrus, garlic, and vinegar add complexity and brightness, making it easier to create flavorful dishes with less added sodium.

Use leftover dip creatively. This Green Goddess Dip isn’t just for vegetables. Try it as a sandwich spread, salad dressing, topping for grilled fish, or sauce for roasted vegetables.

Keep it fresh. Because the dip contains avocado and yogurt, store it in an airtight container in the refrigerator and use it within 3–4 days.
