Everyday Basic Vinaigrette
This dressing is good on any combination of greens and veggies, and it will be good for at least a few weeks!
Thanks to our friends at The Institute of Functional Medicine for sharing this recipe! A simple and delicious dressing for everyday use on salads. Using good quality ingredients in this dressing and your salad, and you can’t go wrong.
Ingredients: (Servings: 8 {1 serving ≈ 1 ½ tablespoons}, Calories: 75)
- ¼ cup vinegar of choice
- Juice of 1 lemon (= 3 tablespoons)
- 1 clove garlic (or 1 teaspoon minced garlic)
- ½ teaspoon ground cumin
- 1 tablespoon raw honey
- 1 teaspoon Dijon mustard
- ½ teaspoon sea salt
- ¼ teaspoon pepper
- 1-2 tablespoons fresh minced parsley
- 2-4 chopped green onions
- ¼ cup extra-virgin olive oil
Directions:
- Add to a blender the vinegar, lemon juice, garlic, cumin, honey, mustard, sea salt and pepper, and blend.
- Add the fresh chopped parsley and onion, and blend.
- Add oil and blend (if possible, slowly stream in oil through an opening in the top of the blender).
- Serve at room temperature.
Note(s): Variation: In place of cumin, add ½ to 1 teaspoon of dried basil or 1-2 tablespoons fresh basil, for a different taste blend.
