Fresh Summer Salad
Plate this seasonal salad up now because the corn and the peaches are fresh and delicious!

You could keep this recipe raw, but we slightly cooked the broccoli and corn this time and it was delicious. Add whatever fresh herbs you have in your kitchen and enjoy!
Ingredients:
- 1 Tbsp olive oil
- 2 ears fresh corn , shucked
- 1 cup fresh broccoli bite size
- 1 peach or nectarine, sliced
- 1 scallion, sliced
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- Fresh mint or parsley
- Salt
- Pepper
Instructions:
Place 1 Tbsp olive oil in a hot skillet with the corn and broccoli and sauté for a few minutes, but do not overcook. Let cool, then add the fruit remaining oil and vinegar and toss to coat. Sprinkle with the scallion and herbs and season to taste with salt and pepper. Serves 2
