
Ginger Miso Chicken or Shrimp

This dish combines your choice of chicken or shrimp with a tasty blend of ginger and miso, creating a delightful harmony that’s quick to prepare and delicious.
Ginger Miso Chicken or Shrimp
- 3 T EVOO or coconut oil
- 1 ½ lbs chicken cut up into thin slices or shrimp peeled and deveined
- ½ cup ginger miso sauce, prepared
- 8 oz shiitake mushrooms, sliced
- 1 cup broccoli slaw
- 1 cup baby spinach
- 1 cup broccoli florets
- 4 scallions, sliced
Ginger Miso Sauce
- 1 ½ T miso paste
- 1-2 large garlic minced
- 2 T sesame oil
- 1 t onion powder
- 1 T rice vinegar
- 2 T sesame seeds
- 1 t wasabi powder
- ¼ cup water
- 1 t fresh minced ginger
Directions:
- In a small bowl, combine all ingredients and mix well until miso and wasabi powder are dissolved. Store in an airtight container until use.
- Add 2 T of oil to a wok or large pan and heat over medium heat. Add chicken or shrimp and cook completely.
- Remove from the pan and set aside. Add the mushrooms and the remaining 1 T of oil and cook through.
- Add broccoli slaw and broccoli and cook for another 5 minutes, mixing well. Add spinach and cook until wilted. Add chicken or shrimp and sauce and mix well. Cook for another 3-4 minutes, mixing continuously.
- Top with green scallions and mix well. Serve over brown rice or quinoa.
