Ginger Miso Chicken or Shrimp

This dish combines your choice of chicken or shrimp with a tasty blend of ginger and miso, creating a delightful harmony that’s quick to prepare and delicious.

Ginger Miso Chicken or Shrimp

  • 3 T EVOO or coconut oil
  • 1 ½ lbs chicken cut up into thin slices or shrimp peeled and deveined
  • ½ cup ginger miso sauce, prepared
  • 8 oz shiitake mushrooms, sliced
  • 1 cup broccoli slaw
  • 1 cup baby spinach
  • 1 cup broccoli florets
  • 4 scallions, sliced

Ginger Miso Sauce

  • 1 ½ T miso paste
  • 1-2 large garlic minced
  • 2 T sesame oil
  • 1 t onion powder
  • 1 T rice vinegar
  • 2 T sesame seeds
  • 1 t wasabi powder
  • ¼ cup water
  • 1 t fresh minced ginger

Directions:

  1. In a small bowl, combine all ingredients and mix well until miso and wasabi powder are dissolved. Store in an airtight container until use.
  2. Add 2 T of oil to a wok or large pan and heat over medium heat. Add chicken or shrimp and cook completely.
  3. Remove from the pan and set aside. Add the mushrooms and the remaining 1 T of oil and cook through.
  4. Add broccoli slaw and broccoli and cook for another 5 minutes, mixing well. Add spinach and cook until wilted. Add chicken or shrimp and sauce and mix well. Cook for another 3-4 minutes, mixing continuously.
  5. Top with green scallions and mix well. Serve over brown rice or quinoa.
