Greek Gyro Meatballs with Tzatziki Sauce

Ingredients (For Gyro Meatballs):

  • 1 lb ground lamb (can substitute beef)
  • 2 T minced red onion
  • Two garlic cloves, minced
  • ½ t salt
  • ½ t rosemary
  • ½ t pepper
  • 1 t dried oregano
  • 1 T avocado or coconut oil
  • ½ t ground cumin
  • ½ t dried marjoram
  • ½ t dried thyme

 

Directions:

Place meat and all dry ingredients in a mixing bowl. Knead to combine. Form mixture into 1-inch meatballs. Heat oil in a skillet. Add meatballs—brown meatballs on all sides. Turn to low heat until cooked throughout. Drain on a paper towel. Can place in oven to heat. Serve with Tzatziki or a pita with lettuce, tomato, and onion as a Gyro.

 

Ingredients (For Tzatziki):

  • One cucumber. Pared and cubed
  • ¼ t dill week
  • 1 t salt
  • 2 t grated onion
  • ¾ cup Greek yogurt, plain
  • ½ t lemon juice
  • ½ cup sour cream
  • 1/2 t salt
  • One garlic clove, minced
  • Pepper to taste
  • 1/8 t Tabasco sauce

Directions:

Place cucumber in a colander and sprinkle with 1 t salt. Let stand for 10 minutes. Rinse with cold water. Drain on a paper towel. Place in a food processor and puree. Place puree in a colander and let drain for 5 minutes. Mix yogurt and sour cream in a small bowl. Stir in garlic, lemon juice, pepper, tabasco, and dill. Stir in cucumber puree. Refrigerate at least 4 hours before serving.
