Greek Gyro Meatballs with Tzatziki Sauce
Ingredients (For Gyro Meatballs): 1 lb ground lamb (can substitute beef) 2 T minced red onion Two garlic cloves, minced ½ t salt ½ t rosemary ½ t pepper 1 t dried oregano 1 T avocado or coconut oil ½ t ground cumin ½ t dried marjoram ½ t dried thyme Directions: Place meat and all dry ingredients in a mixing bowl. Knead to combine. Form mixture into 1-inch meatballs. Heat oil in a skillet. Add meatballs—brown meatballs on all sides. Turn to low heat until cooked throughout. Drain on a paper towel.
