Chicken Kebabs

Mediterranean Marinade

  • 2/3 cup extra-virgin olive oil, divided
  • Juice of 1 lemon, divided
  • 6 cloves garlic, minced, divided
  • 2 teaspoons paprika, divided
  • 2 teaspoons dried thyme, divided
  • 4 teaspoons dried oregano, divided
  • 4 teaspoons sea salt, divided
  • 2 teaspoons freshly ground black pepper, divided

Directions

Marinate the Chicken

  1. Combine half of the marinade ingredients in a bowl.
  2. Place the chicken in a zip-top bag or container and pour the marinade over it.
  3. Refrigerate for at least 30 minutes, or up to 8 hours.

Marinate the Vegetables

  1. Combine the remaining marinade ingredients.
  2. Toss peppers and onions with the marinade.
  3. Refrigerate for at least 30 minutes.

Prepare the Skewers

  1. If using wooden skewers, soak them in water for 20–30 minutes.
  2. Alternate chicken, peppers, and onions onto skewers.

Grill

  1. Preheat grill to medium-high heat.
  2. Lightly oil the grates.
  3. Grill kebabs for approximately 5–6 minutes per side, or until chicken reaches an internal temperature of 165°F.

Oven Method

  1. Preheat oven to 425°F.
  2. Place skewers on a rack over a foil-lined baking sheet.
  3. Bake for 12–15 minutes.
  4. Turn and bake another 10–12 minutes until fully cooked.
