Homemade Mayonnaise

Ingredients:
- 1 c avocado oil
- 1 large egg
- 1 garlic clove, minced
- 1 t lemon juice
- 2 t mustard powder
- 1/4 t salt
Directions:
- Add avocado oil to a wide-mouth glass jar. Add egg and garlic.
- Using an immersion blender on the low setting, lift the ingredients up and down until they become a creamy emulsion.
- Add the lemon and mustard powder and blend briefly to mix in.
- Store in the refrigerator in a jar for up to 7 days.
