Okinawan Cream of Mushroom Soup

This easy-to-follow recipe combines earthy mushrooms with creamy goodness, showcasing the unique culinary delights of Okinawa. Perfect for cozy evenings, this soup is a delectable blend of tradition and comfort that will leave your taste buds craving for more.


  • 1 small onion, chopped
  • 1 T avocado oil
  • 1 t salt
  • 1 ½ cups of shitake mushrooms (or a combination of shiitake, enoki, and shimeji mushrooms)
  • 1 t ginger, grated
  • 2 c organic soy milk
  • 1 bay leaf
  • 1 T miso paste


  1. In a large pot, stir fry onion in oil. Add a dash of salt and cook until soft.
  2. Add mushrooms and continue to sauté until soft.
  3. Add ginger, soy milk, and bay leaf to a simmer. Simmer for 3 minutes.
  4. Turn off the heat, remove the bay leaf, and add miso, stirring to combine well.
