Okinawan Cream of Mushroom Soup

Ingredients:
- 1 small onion, chopped
- 1 T avocado oil
- 1 t salt
- 1 ½ cups of shitake mushrooms (or a combination of shiitake, enoki, and shimeji mushrooms)
- 1 t ginger, grated
- 2 c organic soy milk
- 1 bay leaf
- 1 T miso paste
Directions:
- In a large pot, stir fry onion in oil. Add a dash of salt and cook until soft.
- Add mushrooms and continue to sauté until soft.
- Add ginger, soy milk, and bay leaf to a simmer. Simmer for 3 minutes.
- Turn off the heat, remove the bay leaf, and add miso, stirring to combine well.
