Okinawan Cream of Mushroom Soup
Ingredients:
- 1 small onion, chopped
- 1 T avocado oil
- 1 t salt
- 1 ½ cup of shitake mushrooms (or a combination of shiitake, enoki and shimeji mushrooms)
- 1 t ginger, grated
- 2 cups organic soy milk
- 1 bay leaf
- 1 T miso paste
Directions:
In a large pot stir fry onion in oil. Add a dash of salt and cook until soft. Add mushrooms and continue to sauté until soft. Add ginger, soy milk and bay leaf and bring to a simmer. Simmer for 3 minutes. Turn off heat, remove bay leaf and add miso stirring in to combine well.
