
Roasted Beets with Orange & Thyme
Elevate the humble beet to new levels of culinary delight with our irresistible Roasted Beets with Orange & Thyme recipe, where the vibrant flavors of citrus and aromatic thyme perfectly complement the earthy sweetness of roasted beets.
Ingredients:
- 1 Bunch of beets (approximately 1 1/2 lbs)
- 1 tsp honey
- 1 tsp EVOO
- 1/4 cup of Orange juice
- 2 tsp orange zest
- 3 Tbls balsamic vinegar or vinegar
- 2 tsp Thyme Leaves, chopped
Directions:
- Preheat oven to 400 degrees. Wash and peel beets.
- Drizzle beets with EVOO and salt & pepper. Wrap in tin foil and roast for 30-40 minutes, until tender.
- Cool. Cut beets into 1-inch pieces and place them in a large mixing bowl.
- Brizzle beets with balsamic vinegar, orange juice, and honey, and mix well. Add thyme and orange zest, and mix through.
- You can also sprinkle them with goat cheese and ground pistachios
- Garnish with chopped Parsley
