Roasted Beets with Orange & Thyme

Elevate the humble beet to new levels of culinary delight with our irresistible Roasted Beets with Orange & Thyme recipe, where the vibrant flavors of citrus and aromatic thyme perfectly complement the earthy sweetness of roasted beets.


  • 1 Bunch of beets (approximately 1 1/2 lbs)
  • 1 tsp honey
  • 1 tsp EVOO
  • 1/4 cup of Orange juice
  • 2 tsp orange zest
  • 3 Tbls balsamic vinegar or vinegar
  • 2 tsp Thyme Leaves, chopped


  1. Preheat oven to 400 degrees.  Wash and peel beets.
  2. Drizzle beets with EVOO and salt & pepper. Wrap in tin foil and roast for 30-40 minutes, until tender.
  3. Cool. Cut beets into 1-inch pieces and place them in a large mixing bowl.
  4. Brizzle beets with balsamic vinegar, orange juice, and honey, and mix well. Add thyme and orange zest, and mix through.
  5. You can also sprinkle them with goat cheese and ground pistachios
  6. Garnish with chopped Parsley
