Rosemary Roasted Purple Fingerling Potatoes

Purple potatoes feature unique cancer-fighting properties that traditional white potatoes do not thanks to their specific phytochemicals.

Ingredients:

  • 2 T avocado oil or olive oil
  • 2 T rosemary, chopped
  • 1⁄4tseasalt
  • 1 lb purple fingerling potatoes

Directions:

  • Preheat the oven to 400 degrees. Combine all ingredients in a large bowl. Place on a baking sheet and roast for 25 minutes or until tender and slightly browned.
