Rosemary Roasted Purple Fingerling Potatoes
Purple potatoes feature unique cancer-fighting properties that traditional white potatoes do not thanks to their specific phytochemicals.
Ingredients:
- 2 T avocado oil or olive oil
- 2 T rosemary, chopped
- 1⁄4tseasalt
- 1 lb purple fingerling potatoes
Directions:
- Preheat the oven to 400 degrees. Combine all ingredients in a large bowl. Place on a baking sheet and roast for 25 minutes or until tender and slightly browned.
