Salmon with Blueberry Mango Salsa

Ingredients:
- ½ cup blueberries
- 1 tsp olive oil
- 1/3 cup peeled, diced mango
- Salmon filets 3 oz
- 2 T minced red onion
- Sea salt and black pepper for salmon
- 2 T minced red pepper
- 2 T chopped fresh cilantro
- 1 T lime juice
- ½ t minced jalapeno pepper
- 1 t honey
- ¼ t sea salt
Directions:
- Preheat the oven to 400 degrees. Mix all ingredients except salmon and olive oil in a bowl.
- Keep in the fridge and allow it to sit for at least 20 minutes. It can also be made a day ahead.
- Season salmon with olive oil, salt, and pepper. Place in a serving baking dish sprayed with olive oil. Bake salmon for 20 minutes. Top with salsa and serve.
