Salmon with Blueberry Mango Salsa

Ingredients:

  • ½ cup blueberries
  • 1 tsp olive oil
  • 1/3 cup peeled, diced mango
  • Salmon filets 3 oz
  • 2 T minced red onion
  • Sea salt and black pepper for salmon
  • 2 T minced red pepper
  • 2 T chopped fresh cilantro
  • 1 T lime juice
  • ½ t minced jalapeno pepper
  • 1 t honey
  • ¼ t sea salt

Directions:

  • Preheat the oven to 400 degrees. Mix all ingredients except salmon and olive oil in a bowl.
  • Keep in the fridge and allow it to sit for at least 20 minutes. It can also be made a day ahead.
  • Season salmon with olive oil, salt, and pepper. Place in a serving baking dish sprayed with olive oil. Bake salmon for 20 minutes. Top with salsa and serve.
