Stone Fruit Salad

Any stone fruit will do. I used nectarines, cherries, and plums. Peaches would be delicious.
Ingredients:
- 2 lbs ripe fruit
- One package of Haloumi cheese
- 1 tbl lemon juice
Directions:
- Grill or pan fry Haloumi according to the directions on the package.
- Allow cheese to cool for several minutes.
- Meanwhile, remove the pit from the fruit and slice it into several pieces. Drizzle lemon juice and mix.
- When cheese is cool enough to handle, slice it into large chunks and add to the fruit. Dress with
vinaigrette and toss to mix. - For a substitution: Try fresh ricotta, burrata, or mozzarella.
