Chef Joe’s Fresh Cranberry Sauce

Did you sign up for our Healthy Holiday Cooking class with Chef Joe? If not, there's still time! To get you excited for this class and get you prepared for your best Thanksgiving dinner yet we want to give you Chef Joe's super secret Cranberry Sauce. Ingredients: 3 cups cranberries 1/2 cup of orange juice Zest from one large orange 2 tbsp honey Pinch of salt 1 tbsp Gran Marnier  liquor (optional) Directions:   Combine the orange juice, cranberries, and salt in a food processor. Pulse until cranberries are smooth but not pureed. Note: The cranberries should still have texture. Add honey and Gran Marnier and zest to cranberry sauce. Pulse momentarily, just to incorporate. Maple Cranberry Sweet Potatoes

Get ready for Turkey Day with this delicious sweet potato side-dish that's colorful, cozy, and captures those classic Thanksgiving flavors! This recipe is from @farmfreshcarolinas What you need for 10 servings: ⁠4 pounds sweet potatoes (peeled)⁠⠀Salt⠀1 cup pure maple syrup⁠⠀1 1/2 cups cranberries⁠⠀3 tablespoons butter ⁠⠀ What you do:⁠⠀ Boil sweet potatoes until tender, drain & let cool. ⁠⠀Meanwhile in a saucepan, heat maple syrup to boiling. Reduce heat to boil gently until reduced to 1/2 cup. Stir in cranberries, butter, & 1/2 teaspoon salt, & cook until cranberries pop.⁠⠀Preheat oven to 400 degrees. Slice sweet potatoes into 1-inch slices and arrange in shallow baking dish.⁠⠀Spoon maple-cranberry syrup over potatoes. Bake, uncovered, until hot.
