
Walnut Crusted Baked Cod

This easy-to-make recipe combines the mild taste of cod with the rich crunch of walnuts, offering a nutritious and flavorful meal suitable for any occasion.
Ingredients:
- 1 lb of cod, cut into 4 equal skinless filets. (fresh or frozen)
- ¾ cup walnuts
- ¼ cup gluten-free panko
- 1 tsp onion powder
- 2 T Veganaise, organic
- 1 T lemon zest. Lemon juice from the lemon drizzle after baking.
- ¼ cup Italian Parsley, minced
Directions:
- Preheat oven to 350 degrees.
- Place walnuts in a food processor and chop until you have a lumpy meal. Add the panko, onion powder, lemon zest and parsley and mix to blend.
- Equally spread Veganaise over each filet. Top with the walnut mixture and press into fish.
- Bake at 350 degrees for 20 minutes.
- Drizzle with lemon juice before serving.
