Walnut Blueberry Oatmeal Energy Bites
A great addition to any breakfast, these Walnut Blueberry Oatmeal Energy Bites are savory and filling enough to give you that energy boost needed as a healthy snack.
For a healthy brunch or breakfast serve with the chicken sausage, scrambled eggs and fresh fruit.
Ingredients:
1 cup walnuts, lightly toasted and chopped
1 cup whole wheat or brown rice flour if gluten-free
1 cup gluten-free regular oats (not instant)
½ cup shredded unsweetened coconut flakes
1/3 cup maple sugar or coconut sugar
1 t cinnamon
1/8 t cardamom.
¼ t sea salt or Himalayan salt
½ cup dried blueberries
¼ cup maple syrup
3 T olive oil
2 T grass-fed organic butter or ghee
1 t baking soda
2 T boiling water
Directions:
Preheat oven to 350 degrees. Cover cookie sheets with parchment. In a mixing bowl combine walnuts, flour, oats, coconut, maples sugar, cinnamon, cardamom, and salt. Mix well. Add dried blueberries and stir to combine.
Combine maple syrup, olive oil, and butter in a saucepan. Place over medium heat and stir until butter melts. In a small bowl add baking soda to boiling water and stir to dissolve. Add the syrup mixture and stir to blend. It will become very bubbly. Pour mixture into dry ingredients. Stir vigorously to combine.
Using a tablespoon and your hands scoop up the dough and press them into small balls. Place them 2 inches apart on cookies sheets. Press each ball down to flatten slightly with hand. Bake 10-12 minutes until cookies have spread slightly and are golden on the edges. Cook for 5 minutes. Store in an airtight container.
