Watermelon, Blueberry and Feta Salad

Light, refreshing, and antioxidant-rich,  perfect for summer!

This vibrant summer salad brings together sweet watermelon, juicy blueberries, and creamy feta for a refreshing dish that’s as beautiful as it is nourishing. Packed with antioxidants, fiber, and hydrating ingredients, it’s the perfect addition to your next cookout, brunch, or weeknight dinner.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup fresh blueberries
  • ½ cup crumbled feta cheese (or dairy-free alternative)
  • ¼ cup fresh mint leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction (optional)
  • Juice of ½ lime
  • Pinch of sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, gently combine the watermelon, blueberries, and chopped mint.
  2. Drizzle with olive oil and lime juice. Add a pinch of salt and a few cracks of black pepper.
  3. Sprinkle crumbled feta on top and lightly toss to combine.
  4. Finish with a drizzle of balsamic glaze if desired, for a touch of acidity and depth.
  5. Serve chilled and enjoy immediately.

Watermelon is over 90% water, making it a great hydrating food. Blueberries bring a boost of antioxidants to support brain and heart health. Paired with the healthy fats from olive oil and the protein in feta, this salad is a balanced blend of flavor and function.
