Overnight Oats with a Secret Ingredient

Have you ever had Baobab fruit or powder? This wonderful fruit is unavailable fresh in most parts of the world, so it is more commonly found as a dried powder.

It has a nice and tangy citrus flavor and is rich in potassium, calcium, prebiotic fiber, and vitamin C. Mine was gifted to me by @dhownaturefoods and is 100% pure organic baobab

If you have our book, this recipe is in the breakfast section and I omitted the nutmeg and added in baobab. YUM!

Recipe deets:
2 cups rolled oats
2 Tbsp chia seeds
1/2 cup unsweetened coconut
1 cup grated carrot
2/3 cup raisins
4 cups plant milk
3 Tbsp maple syrup
1 tsp cinnamon
1 Tbsp baobab powder
1/3 cup chopped walnuts

Combine, cover and refrigerate overnight. Before serving add a dollop of nut butter if desired!
