Mini Salmon Cakes

People raved about this Mini Salmon Cakes recipe when we made them at our last in-person cooking event..remember those things ;) So much so that we felt necessary to share it with the world. Enjoy! Serves 10 Ingredients: 2 Salmon Filets or 2 large cans of Salmon 1 1/2 t salt 1 1/2 t pepper One onion diced, sauteed 2/3 cup plain breadcrumbs (Almond Flour as a Vegan option) 1/3 cup light mayo (Avocado Mayo as a Vegan option) 1/4 cup Dijon mustard One egg 4 T lemon juice Directions: Preheat oven to 400 degrees Salt & Pepper the salmon and cook in preheated oven for 15 minutes. Today’s gluten has been hybridized and processed and saturated with glyphosate (Roundup) a pesticide commonly used in the harvesting of wheat. Gluten is a common food sensitivity. Gluten has been found to negatively impact our gut lining leading to an immune response that can set us up for systemic inflammation and symptoms. Unfortunately, many gluten-free food options are not always healthy alternatives. Roasted Cauliflower Hummus Dip  Prep Time: 10 minutes  Cook Time: 25 minutes  Total Time: 35 minutes Ingredients 1 head of cauliflower broken into inch-sized florets 2 teaspoon sea salt 4 - 5 tablespoon extra virgin olive oil 3 cloves of garlic 1 tablespoon lemon juice 1 tablespoon Nutritional Yeast Instructions Preheat the oven to 400 degrees F. Line a large baking sheet with foil. Add the cauliflower florets, sea salt, and 1 - 2 tablespoons of the olive oil to a large bowl. Toss with your hands to evenly coat all of the florets with olive oil and sea salt. Spread the cauliflower florets in a single layer on the foil lined baking sheet, giving as much space in between the florets as possible.
