Brain-Healthy Lentil Soup

Christina Ferrare recently published a book called Food for Thought which contains brain-healthy recipes. We're sharing one of her tasty recipes: South African Red Lentil Soup with Spiced Oil SPICED OIL: 1/3 cup extra virgin olive oil 1 small garlic clove smashed 2 teaspoons dried mint, crumbled 1 teaspoon paprika 2 teaspoons red pepper flakes ¼ cup chopped fresh cilantro INSTRUCTIONS: Add all of the ingredients into a Mason jar or small glass container with a lid. The Power of A Second Opinion by Dr. Nancy Palermo Lietz, MD Caroline was a healthy 46 year old diagnosed with breast carcinoma in situ following a radiology biopsy done after an abnormal mammogram. As with many women, she was eager to proceed with treatment and was quickly referred to a surgeon through her primary care with no forethought or research on treatment options.  She was quickly scheduled for a lumpectomy and node biopsy only to find out a month later that the cancer was more advanced and she would require further surgery and treatment. Quick and Easy Applesauce

We cooked pork chops last week and realized that we didn't have applesauce for the kids! After a quick Google search, we found this yummy recipe from EatingWell. It's simple, fast and best of all the girls wanted seconds. We plan on making it again this weekend! Ingredients 4 Apples 1 – 2 tablespoons of brown sugar Pinch of cinnamon (to taste) Directions Peel, core and dice up apples and place in a medium microwaveable bowl. Cover and microwave until softened, about 4 – 5 minutes. Carefully remove from microwave and transfer to a food processor, add brown sugar, cinnamon and puree until desired consistency. Avgolemono Soup (Chicken Soup with Avogolemono sauce)

Avgolemono is a traditional Greek sauce made with eggs and lemons. It can also easily be prepared as a comforting chicken and rice soup.  Soup Ingredients: ½ cup rice 1 chicken, cut up 3 quarts of water Salt and pepper 1 T butter   Sauce Ingredients: 4 eggs Juice of 2 lemons 3 T water   Directions: Clean and wash chicken and place in a large saucepan with water. Bring to a boil over a high flame. Reduce heat to medium and cook 1 hour or until tender. Remove chicken from broth. Add salt and pepper to taste. (Can use chicken for other use or can cut up and put in soup or place cooked chicken in the oven to brown and serve) Add rice to broth. Add butter. Cook for 2 minutes. Prepare Avgolemono sauce. Greek Village Salad

This traditional Greek Village Salad consists of refreshing ingredients like cucumbers, tomatoes, and feta. It's a perfect side dish or can be prepared as a main-dish and topped with grilled chicken or fish. Salad Ingredients: 2 red tomatoes, cut into wedges 2 cucumbers, sliced thickly and halved 4 green onions, chopped ¼ lb feta cut into small chunks ¼ lb Kalamata olives 1 green pepper, sliced salt, pepper and oregano Dressing (follows)   Dressing Ingredients: 1 cup red wine vinegar 2 cups olive oil Juice of 1 lemon 2 garlic cloves, minced 1 t oregano Salt and pepper to taste   Directions: Combine all ingredients except seasonings and dressing in a bowl. Greek Feta and Red Pepper Dip

This savory dip is a sophisticated appetizer for serving to guests but can also be used a simple salad-topper!   Ingredients: Roasted red pepper 6 oz feta cheese Juice from ½ lemon 1 t fresh oregano 1/2t hot sauce Extra Virgin olive oil Directions: Roast red pepper. Once blackened put in a bowl. Cover tightly with foil for 5-10 minutes. Blend feta, red pepper, lemon, oregano and hot sauce. Add EVOO until smooth. Serve with crackers or vegetables.
