Instant Pot Chicken Pad Thai

Looking for an easy and flavorful dinner with healthy ingredients and very little clean-up? Try this delicious Instant-Pot Chicken Pad Thai! Ingredients: 2 tbsp olive oil 2 chicken breasts, diced 4 cloves garlic minced 3 tbsp low-sodium soy sauce or tamari 1/2 cup jarred pad thai sauce (I like Thai Kitchen brand) 1 1/2 cups water 7 oz rice noodles 1 cup Carrot matchsticks 1/2 each red and yellow pepper, sliced 4 green onions, sliced 1/3 cup chopped peanuts 1/3 cup fresh chopped cilantro Directions: Add olive oil, chicken, garlic, soy sauce, pad thai sauce, water, and rice noodles to Instant Pot in that order, leaving noodles floating slightly above other ingredients. Sweet Potato Brownies

Ingredients 1cup sweet puréed sweet potato 2/3cup maple syrup 1/2cup almond butter 1tsp pure vanilla extract 2Tbsp coconut oil 1/2cup cocoa powder 1tsp baking powder 2/3cup oat flour 1/2cup chopped raw pecans 1/4cup dairy-free chocolate chips   Directions Cut a sweet potato in half and rub the cut sides with oil. Bake at 375 for minutes or until tender. Then peel away skin and mash in a mixing bowl. Set aside. Reduce oven temperature to 350 degrees and line an 8×8-inch baking pan with parchment paper. Salmon Burgers with Avocado Salsa

This easy and healthy salmon burger is a family favorite! Ingredients for Salmon Burgers: 1 lb salmon fillet (skin removed) 1 cup fresh breadcrumbs (see note) 1/4 cup chopped cilantro or parsley 2 eggs 1/4 cup mayonnaise 1 tbsp lemon juice 1 tsp mustard 1/2 tsp. salt 1/2 tsp. pepper olive oil for greasing the pan or grill Ingredients for Avocado Salsa: 1 large avocado, chopped 1/3 cup chopped red onion 1/4 cup chopped fresh cilantro 1 lime, juiced 1 tbsp extra virgin olive oil salt and pepper Directions: Chop the salmon fillet into small pieces (about 1/4 inch) and transfer it into a medium mixing bowl. Magnesium is an essential mineral and is the fourth most abundant mineral used in the body. It is an essential cofactor for over 300 enzymatic systems in the body that regulate biochemical reactions. Some of these include protein synthesis, muscle and nerve function, blood pressure maintenance, bone structure, energy production, memory, and detoxification.
