Ingredients: 3 tablespoons Light Olive Oil 4 pieces Fresh Cod Fillets (200-250 grams each) 300 grams Cherry Tomatoes cut in half 1/4 cup Garlic, chopped finely 1/2 cup Chardonnay White Wine Juice of 1 Lemon Fresh Thyme Leaves Salt & Pepper, to taste Directions: Heat oil in a large sauté pan. Ingredients: 2 tbsp olive oil 2 chicken breasts, diced 4 cloves garlic minced 3 tbsp low-sodium soy sauce or tamari 1/2 cup jarred pad thai sauce (I like Thai Kitchen brand) 1 1/2 cups water 7 oz rice noodles 1 cup Carrot matchsticks 1/2 each red and yellow pepper, sliced 4 green onions, sliced 1/3 cup chopped peanuts 1/3 cup fresh chopped cilantro Directions: Add olive oil, chicken, garlic, soy sauce, pad thai sauce, water, and rice noodles to Instant Pot in that order, leaving noodles floating slightly above other ingredients. Ingredients 1cup sweet puréed sweet potato 2/3cup maple syrup 1/2cup almond butter 1tsp pure vanilla extract 2Tbsp coconut oil 1/2cup cocoa powder 1tsp baking powder 2/3cup oat flour 1/2cup chopped raw pecans 1/4cup dairy-free chocolate chips   Directions Cut a sweet potato in half and rub the cut sides with oil. Bake at 375 for minutes or until tender. Then peel away skin and mash in a mixing bowl. Set aside. Reduce oven temperature to 350 degrees and line an 8×8-inch baking pan with parchment paper. We cooked pork chops last week and realized that we didn't have applesauce for the kids! After a quick Google search, we found this yummy recipe from EatingWell. It's simple, fast and best of all the girls wanted seconds. We plan on making it again this weekend! Ingredients 4 Apples 1 – 2 tablespoons of brown sugar Pinch of cinnamon (to taste) Directions Peel, core and dice up apples and place in a medium microwaveable bowl. Avgolemono Soup (Chicken Soup with Avogolemono sauce)

Avgolemono is a traditional Greek sauce made with eggs and lemons. It can also easily be prepared as a comforting chicken and rice soup.  Soup Ingredients: ½ cup rice 1 chicken, cut up 3 quarts of water Salt and pepper 1 T butter   Sauce Ingredients: 4 eggs Juice of 2 lemons 3 T water   Directions: Clean and wash chicken and place in a large saucepan with water. Bring to a boil over a high flame. Reduce heat to medium and cook 1 hour or until tender. Remove chicken from broth. Add salt and pepper to taste.
